摘要
以菠菜为主要原料,探讨调制果蔬纸的加工方法;对果蔬纸质量评价方法、加工工艺进行了研究,得出了最佳工艺参数范围,所制果蔬纸薄而软,营养易于调控、强化,口味良好,色泽、形状诱人,特别适宜老人、儿童食用。
Concocted fruit & vegetable papers consists of mixed fruit and vegetabl e. With spinach to be the main raw material, this paper study the methods of val uating fruit and vegetable paper quality. The quality of papers are also discuss ed.The optimum technology parameters are found. The conclusions are:fruit & vege table papers are suit for old people and teenagers to eat. They can also be used as eatable inner package materials.
