摘要
使用纤维素酶、果胶酶、蛋白酶等具有较强细胞破壁作用的酶类水解大豆乳液来提取油脂,本文就大豆的组成成分及对大豆各组成成分作为酶的作用底物的性质进行论述,并对大豆水相酶解有机溶剂萃取提油工艺的特点与优点进行评价,讨论其在油脂的工业生产上的可行性。
The soybean milk was hydrolyzed by some kinds of enzymes which included cellulase,pectase,protease etc.These enzymes have powerful hydrolytic ability.In this article,we discussed the components of soybean and their qualities.At last,the feasibility for technological process of aqueous enzymatic extraction soybean oil was estimated.
