摘要
综述了各种来源的植酸酶温度和pH稳定性、酶活调节因子、酶促反应动力学等酶学特性研究现状。
In this paper the enzymologial characteristics of phytase such as the stability under various temperature and pH value, the optima of temperature and pH value, modulators of enzyme activity, kinetic property of phytase were overviewed.
