摘要
对辽宁省稻米的主栽品种进行了调查,从加工品质、外观品质、蒸煮食味等方面分析了我省目前稻米品质的现状及影响我省稻米品质的关键因子,提出了提高稻米品质应该在水稻品种选育方面注意垩白度、垩白率、长宽比、胶稠度、直链淀粉含量、糊化温度、整精米率等问题。
Made an investigation on the main rice of Liaoning Province, analyze the actuality of rice quality and key factor of influencing rice quality from the artifactitious character, cooking and tasting character and the surface character et al, you should pay attention to the rate of chalkiness, chalkiness degree, length-widen rate, gel consistency, amylose content, gelatinization temperature, head rice rate et al on rice variety`s selection.
