摘要
卷心菜是一种重要的十字花科蔬菜,在我国各地广为种植,是我国人民食的用主要菜种之一。本文应用鼠伤寒沙门氏菌回复突变试验(Ames试验),采用标准平皿渗入法,以TA98为指示菌株,研究了卷心菜汁的抗诱变作用,并比较了新鲜菜汁与煮沸菜汁抗诱变作用的差异。结果表明,新鲜原汁能明显抑制不同剂量3-氨基-1-甲基-5氢-吡啶(4,3b)哚吲(Trp-p-2)(0.1-1.6μ/皿)所诱发的TA98回变作用,抑制率为81-96%。不同浓度新鲜莱汁对Trp-P-2(0.2μg/皿)诱发的TA98回变具有不同的抑制作用,抑制率为28-100%,呈一定剂量-效应关系。加热煮沸后的菜汁对Trp-P-2(0.2μg/皿)也有一定的抑制作用,但较新鲜菜汁低,抑制率可达70%。
Cabbage, one of the important kind of vegetables, belongs to Cruriferae family, and is planted in China widely.In this study, the antimutaganicity of cabbage juice was evaluated using Ames test.The results showed that the fresh cabbage juice could inhibited the reverse mutation in the TA98 strain induced by 3-amino-1-meth1-5H-pyrido [4,3-b] indole(Trp-p-2) dose-dependently.The inhibitory rates of fresh cabbage juice at various concentration were rang from 28%to 100% respectively. The boiled cabbage juice was also displaying inhibitory effect when then concentration of Trp-p-2 was 0.2μg per dish but less effective than freshjuice.
