摘要
利用连续 2 0年的肥料长期定位试验田 ,研究了长期氮磷钾配施与单一施氮、不施肥处理的稻米品质差异 ,结果表明 :(1)长期氮磷钾配施能显著或极显著提高稻米的加工品质 ;(2 )长期氮磷钾配施未能改善稻米的外观品质 ,劣化趋势较为明显 ,但处理间的差异未达显著水平 ;(3)能显著降低稻米的直链淀粉含量 ,增加蛋白质含量 ;(4 )在蒸煮食用品质上 ,长期氮磷钾配施表现为最高粘度、崩解值、冷胶粘度、消减值低于二个对照 ,热浆粘度微高于单一施氮 ,但比未施肥下降 12 .79%。
The 20-year successive location test for rice was carried out in order to study the effects of long-term N, P and K mixed application, only nitrogen fertilizer application and no fertilizer application on rice quality. The results showed that the long-term N,P and K mixed application could significantly enhance the rice processing quality, but not improve the quality of rice appearance and even there was a tendency for the quality to deteriorate though the difference between the treatment was not significant. The long-term N,P and K mixed application could significantly decrease the amylase content of rice and increase the protein content. And in digestion, as compared with theother applications the long-term N, P and K mixed application made the peak viscosity, breakdown viscosity, final viscosity and setback viscosity drop except the through viscosity which was slightly higher as compared with only applying chemical N fertilizer but decreased by 12.79% as compared with no fertilization.
