摘要
利用 1398中性蛋白酶水解的脱脂豆粕作为多肽的来源 ,对多肽络合锌的制备工艺条件进行了初步研究。研究了配位体摩尔比和pH值对络合反应的影响 ,确定合适的配比反应条件为 :配位摩尔比为 2∶1,pH =8 0 ,产品络合率达到 97%以上。并且用化学分析法和红外光谱法鉴定了产品。初步实验得出多肽络合锌具有抗氧化性。
Micro mineral zinc chelate of polypeptide was made from soy-cake hydrolysate of1398 neutral enzyme in this research work. The synthetic conditions of zinc chelate of polypeptide for food additive were studied with an emphasis on the chelating reaction. The optimum conditions for the synthesis were found as follows: the molar ratio of ligand 2∶1; pH8.0. The percent chelation was over 97%.The obtained product was examined with chemical analysis and IR spectra. Test results indicated that zinc chelate of polypeptide was an antioxidant additive.
