摘要
本文简要介绍了凝乳酶的一般特性和凝乳机理 ,综述了微生物源凝乳酶的研究进展和利用基因工程生产凝乳酶的发展状况 。
This article briefly introduced the general characteristics and the milk_clotting mechanism of chymosin,summarized the research progress of chymosin by microorganisms and the development condition on implying chymosin cloning to produce,finally the production and the development of chymosin were forecast.
