摘要
在综合筛选乳状液乳化稳定性评价方法的基础上,对国产大豆粉末磷脂的使用条件和方法以及复合作用对其乳化性能的影响进行了系统的研究。本研究结论对于指导磷脂的使用和新产品开发具有重要意义。
On the basis of comprehensive selection of the testing methods on evaluating the stability,the effects of the utilization conditions and methods,and also the complexing effects on the emulsionpropertise of soybean lecithin powder have been studied systematically.The results of the about studywould be of significance on guiding the use of ecithin and the manufacture of new products of lecithin.
