摘要
对生料法酿造黄酒的工艺条件进行了初步研究。淀粉糖化和酒精发酵同时进行 ,接入 3 %的麦曲和0 6%的生料曲 ,于 2 6℃左右发酵 ,可制得一种营养丰富 。
This paper shows the preliminary research on the process condition of yellow rice wine brewage with uncooked materials. Starch sacchariferous and alcohol fermentation goes at the same time, vaccinating 3% wheat leaven and 0.6% uncooked leaven, fermenting at about 26℃, and then we will get a kind of yellow ice wine that is rich in nutrition and has thick alcoholic flavor.
