摘要
研究表明,果实矿质元素组分中,以钾含量最高,约占大量元素总量的50%,次为氮,铁约占微量元素总量的70%。然而,构成品质的4项指标中,微量元素锌、铝、铁、锰起重要作用,尤其是锌对这4项指标的影响占第1、2位。通过通径分析,明确了各元素对总糖量的直接影响,以及元素间的相互作用及其对总糖量的间接影响。树冠外围果实的矿质元素含量,总趋势为除氮外的各元素含量高于内膛果实,但仅锰、铝差异显著,其它元素差异不明显。外围果的着色度、硬度、可溶性固形物均显著优于内膛果。不同果园的果实,元素以钾差异最大,品质中以硬度、含酸量差异显著,尤为糖酸比。果实中氨基酸总量与含氮量、肥水管理有关。
The effect of mineral element contents upon the hardness, coloration,sugar contents and acid contents were investigated and amino acids were analysed in the fruits of'Starking Delicious'apple sampled from different types of apple orchards in Shandong from 1986 to 1988. The results showed that the content of potassium was the highest among the major elements,roughly 50% of the total macroelements containedj and the content of nitrogen was the second.The content of iron was about 70% of the total microelements contained.the elements of zinc, aluminium, iron and manganese are the four index of fruit quality, which play an important role.The effect of zinc on the fruit quality was the first or the second.The direct effects of various elements upon the total sugar content, interaction among elements, and their indirect effects upon total sugar content were made clear through path coefficient analysis.The content of all elements analysed except nitrogen of the outside fruits tends generally was higher than that of the inside fruits.However, only the contents of manganese and aluminium showed a significant difference.The coloration, hardness, soluble solid substance of the outside fruits were significantly better than those of the inside fruits.Variation among the contents of potassium in fruits sampled from different orchards was the largest;and the hardness,acid content, especially the ratio between sugar and acid, differed significantly. The total content of amino acid in fruits was related to nitrogen content and fertilizer and water management.
