以猪血为原料 ,用蛋白酶水解蛋白质 (水解条件为 :pH9,5 0℃ ,5h) ,分离后得到血红素铁溶液 ,并配以辅料 ,研制铁强化功能饮料。最佳配方为 :血红素铁溶液 5 0 %、蔗糖 10 %、柠檬酸 0 5 %、稳定剂 0 3 %、山梨酸钾 0 0 5 %、香精适量。
The protein in pig blood was hydrolyzed by protease (pH9, 50℃, 5 hours) to get the solution of heme, which was in turn mixed with other ingredients to give Fe-fortified functional drinks. The optimum formula was as follows: the solution of heme 50%, sugar 10%, citric acid 0.5%, stabilizer 0.3%, potassium sorbate 0.05% and some flavouring.
