蜂王幼虫干粉蛋白质的生物利用率和营养食效性研究 被引量:2

摘要 近年来,昆虫蛋白渐受人们重视,国外学者认为昆虫蛋白纤维少,营养成分易被人体吸收[1].蜂王幼虫是生产新鲜蜂皇浆的副产品,我国每年可获得220吨左右[2],是一种亟待开发利用的天然食品.目前国内外对蜂王幼虫的医疗保健作用研究较多,也有增强机体免疫力的报道[3].为了探讨其营养价值,开辟新的蛋白质资源,我们对蜂王幼虫蛋白质进行了营养评价.
