摘要
采用半微量凯氏定氮法、荧光分光光度法、色谱—质谱联用分析法、原子吸收分光光度法,分析测定了哈士蟆油和青蛙油的蛋白、脂溶性维生素、脂肪酸、微量元素及重金属的成分和含量。结果表明:蛤士蟆油与青蛙油蛋白含量较高,分别为72.8%和73.8%;蛤士蟆油维生素A和维生素D的含量分别为青蛙油的1.3和1.6倍;蛤士蟆油维生素E的含量为4.09μg g,在青蛙油中未测出维生素E;蛤士蟆油与青蛙油脂类物质含量基本一致,约为6%,其中不饱和脂肪酸含量分别占其脂肪酸的77.26%和64.67%;蛤士蟆油与青蛙油均含有人体必需的常用微量元素,但青蛙油中重金属Pb、Hg含量超标。
The content of the main nutrient compositions, including the crude proteins,the fatty acids, the vitamins, the trace elements,of the oviducts ranae from Rana temporaria chensinensis and Rana nigromaculata was assayed.The result showed that both of them contained abundant proteins,some vitamins,unsaturated fatty acids and some common trace elements, which are useful to human health. There were the more heavy metal Pb and Hg in the oviducts ranae of Rana nigromaculata than the standard.
