摘要 谈及微生物污染肉品的途径,并介绍了一些现代肉类加工企业为保证产品卫生质量可采用的栅栏技术、HACCP技术、微生物预报技术、食品生产卫生规范等措施。 The path of mincroorganism contamination happened in meat products is related, some measures such as Hurdle Technology, HACCP, Microorganism Forecast Technology and GMP, conducted in modern meat processing plants are introduced.
