摘要 海藻糖具有独特的生物学功能 ,在医药、食品等行业应用潜力巨大。本文就海藻糖的性质、生物学功能、酶法合成的研究进展进行了综述 ,并简要叙述了海藻糖在食品工业中的应用。 Trehalose has great potential usage in medical and food industry due to its unique properties The paper reviewed the advances of properties, biological functions and enzymatic synthesis of trehalose, and it also described the application of trehalose in food industry
