摘要
山东小麦品质的显著特点是蛋白质含量和面筋含量高,而蛋白质质量(从烘烤品质的角度)和面筋质量较差。从不同时期选育推广的品种来看,蛋白质含量有所下降,而蛋白质质量则有所提高。80年代末,山东省选育的丰产优质小麦新品系在蛋白质含量与质量上有较大突破。90年代山东小麦品质改良工作已由优质稳产型向优质高产型方向发展。
Wheat varieties cropped in Shandong had been characterized by rich but qualitatively low protein and gluten conversely,that bred and released before the mid 80s slightly decreased in quantity and increased in quality of protein and gluten.New lines created since the end of 80s have been greatly improved both in quantity and quality of protein.At the beginning of 90s,the direction of wheat breeding has been changed from good quality and stable yield to top quality and high yield.
