摘要
本文研究结果表明,柑桔皮中黄酮类化合物在猪油中有明显的抗氧化作用,尤其在柠檬酸、抗坏血酸和某些氨基酸存在时,抗氧化作用显著加强。
The result showed that the flavoinds from mandarin orange peel havea certain antioxygenic activity in lard, especially in the presence of citric acid, asscorbic acid and some aminoacids, the antioxygenic activity was evidently enhanced,
