甘肃省小麦品种(系)品质分析与评价 被引量:6

Analysis and Evaluation on Quality of Wheat Varieties in Gansu Province

摘要 分析测定了当前甘肃省大面积推广和新选育的30个小麦品种(系)的理化性质及面团流变学特性。结果表明大部分品种(系)属于硬质小麦,容重出粉率中上,灰分含量较低,湿面筋含量较高,吸水率高,沉淀值相对较低,粗蛋白含量较低,面团流变学特性较差,绝大部分品种(系)仅适合于加工馒头、面条等传统面食。并针对甘肃省的小麦品质现状、资源优势及区域特性,对今后优质小麦育种、优质小麦生产基地和品种的开发利用作了探讨。 The quality characters of 30 wheat varieties (lines) in Gansu province were studied. The results showed that most varieties were rigid, and grain test weight , flour yield ,wet gluten content , water absorption were higher, but sedimentation value .gross protein content, development time, stability time were lower. Most of them, in a word, were only suitable for noodles, steamed bread. Facing the status of wheat quality , resource superiority and characteristic of region in Gansu , the breeding of good wheat, properly planting areas and industrial exploitation for special wheat varieties were also discussed in the paper.
