摘要
从丹贝样品中分离和筛选到一株耐高温型根霉菌 RT-3,经鉴定为少孢根霉(Rhizopus oligosporusSaito).利用该菌发酵国产普通大豆制成的丹贝食品,无豆腥味,风味独特,外观新奇.经测定其蛋白质含量高达54.1%,蛋白质真实消化率(TD)为94.4%,和动物蛋白质的消化率相当.有关高温型少孢根霉鉴定和丹贝研究属国内首次报道.
A thermo-tolerable Rhizopus sp.strain RT-3 was isolated from Tempe.It was identified asRhizopus oligosporus Saito.Tempe prepared by using this fungus had good flavor and attractive appearance.Its true digestibility measured by biological methods was up to 94.4%,analogus to animal protein.This re-search was first reported in China.
