摘要
主要研究了HACCP体系的原则和实施步骤 ,着重讨论了危害分析和关键控制点 ,并以食用植物油的生产为例说明了如何进行危害分析和关键控制点的确定 ,可为油脂企业制定HACCP计划提供借鉴。
This paper studied the principles and implementation of HACCP. Hazard analysis and critical control points were thoroughly discussed. Its application was demonstrated in vegetable oil production in terms of hazard analysis and critical control points. This study will be used to develop an HACCP plan for processing safe vegetable oil.
