摘要
选取18个软质小麦品种于2000-2001年分别种植在合肥和宿州,分析碱性水保持力(AWRC)、SDS沉降值、膨胀势、直链淀粉相对含量、PPO活性等5个品质性状的变异。结果表明:品种间AWRC、SDS沉降值和直链淀粉相对含量差异极显著,膨胀势间差异显著,PPO活性差异不显著;地点间AWRC、PPO活性、直链淀粉相对含量差异极显著,SDS沉降值、膨胀势差异不显著。两试点间AWRC、SDS沉降值的品种差异较一致,其次是直链淀粉相对含量。AWRC和直链淀粉相对含量既受品种差别的影响又受环境的影响;SDS沉降值和麦粉膨胀势主要受品种的影响,而PPO活性主要受环境的作用。
In order to determine relative contribution of variety and environment to variations in wheat processing quality, 18 Chinese wheat cultivars and experimental lines were evaluated in two environments (Hefei and Suzhou) in 2001. SDS sedimentation volume, amylose content, Polyphenol oxidase (PPO) activity, alkaline water retention capacity (AWRC) and swelling power were measured. The results indicated that the differences among the wheat varieties were highly significant in AWRC, SDS sedimentation volume and relative amylose content, significant in swelling power, and not significant in PPO activity. The differences between the locations were highly significant in AWRC, PPO activity and relative amylose content, not significant in SDS sedimentation volume and swelling power. The correlation analyses indicated that AWRC and relative amylose content were significantly influenced by environments and cultivars.Variety had a larger influence on SDS sedimentation volume and swelling power than genotype, but the variance in PPO activities between two locations appeared larger than the variation produced by the cultivars.
