摘要
对56日龄的河田鸡进行9~12周、13~16周两阶段的饲养试验和肉质性状测定,结果表明,1同阶段同性别同部位3个处理间的理化性状(包括肌肉含水率、pH1值、pHu值、滴水损失率)差异不显著(P>0.05,13~16周公鸡胸肌pH1值除外);9~12周公鸡胸肌、母鸡腿肌的肌纤维直径和密度,13~16周公鸡胸肌肌纤维密度和母鸡胸肌直径以及9~12周公鸡腿肌肌纤维密度不同处理间均存在显著差异(P<0.05),其余同阶段同性别3个处理间的肌肉组织学性状差异不显著(P>0.05);随着日粮中稻谷添加比例的提高,上述肉质性状的变化趋势因阶段、性别及部位的不同而有差异;2同阶段同性别不同部位间(胸肌、腿肌)的肉质性状存在差异;3同阶段同部位不同性别间的肉质性状存在差异,其中13~16周肌肉的组织学性状存在显著差异(P<0.05);4同性别同部位不同阶段的肉质性状存在差异,其中胸肌pH1值、胸肌及腿肌的组织学性状存在显著差异(P<0.05)。
The feeding experiment of 56-day-age Hetian chickens (two stages:the 9-12th weeks,the 13-16th weeks) and the meat quality test were conducted to study the effect of paddy supplementation in diet on meat quality characteristicsThe results showed that: ①The muscular mositure and pH1 and pHu and drip loss ratio among 3 treatments were insignificant difference at the same stage,the same sex and the same body part(P>005,except the muscular pH of male breast at the second stage), so were the muscular histological characteristics;however,the diameter and density of male breast muscle and of female thigh muscle and the density of male thigh muscle at the first stage,the density of male breast muscle and the diameter of female breast muscle at the second stage among 3 treaments were significant difference(P<005) With the increase of paddy supplementation in the diet, the differentiation trend of meat quality characteristics has been observed in the different treatments of the stage,the sex and the body part ②The meat quality characteristics were different between the two body parts(breast muscle and thigh muscle) at the same stage of the same sex ③The meat quality characteristics were different between the different sexual chicken(male and female) at the same stage and in the same body part,the muscular histological characteristics were significant difference at the second stage(P<005) ④The meat quality characteristics were different between the two feeding stages at the same body part of the same sex,the muscular pH1 of breast and the muscular histological characteristics were significant difference(P<005).
