摘要
本文报道了从1991年至1993年对汕头口岸航行于香港两客轮的餐具、食品卫生监督情况。共对餐具抽检631份,进行细菌总数、大肠菌群数检验,合格率为86.69%;生食品555份,合格率98.92%;熟食品136份,合格率71.32%。对各种指标合格率低的原因进行了分析,提出今后监督的重点和措施。
The present paper reports the situation about sanitary inspection of foodstuffs and tableware on two ships which sailed from Shantou to Hong Kong since 1991 to 1993. According to the total numbers of bacteria and coliform group which were seperated from 631 samples of tableware, the qualified rate is 86. 69%. From 555 samples of raw food, it's 98. 92%. From 136 samples of cooked food, it's 71. 32%. The reason of the qualified low rate was discussed in the paper, and author gives some suggestions on supervision in future.
