摘要
本文研究了芜菁块根采后贮藏过程中的生理生化变化,结果表明:室内自然堆放的芜菁块根随着贮藏时间的延长,含水量降低,过氧化物酶(POD)活性升高,过氧化物酶同工酶谱带先增多后又减少。30d内,可溶性蛋白的含量平稳地下降,膜系统保持的比较完整,呼吸强度基本保持平稳;30d后,可溶性蛋白的含量明显下降,呼吸强度突然上升随即又快速下降。
Studies on the physiological changes of root tubers of turnip of Wenzhou during the storage were carried out. The results showed that during the process of the natural senescence, the water content decreased , the activity of POD increased,and the bands of POD isozyme increased firstly and then decreased. The soluble protein contents decreased steadily, membrane systems kept relatively complete and the respiration intensity was fundamentally steady. After 30 days, the soluble protein content decreased obviously, respiration intensity increased suddenly then decreased rapidly.
