摘要 抗菌物质是具有抗菌作用的活性物质。近年来,开发抗菌性强、安全无毒和性能稳定的天然食品防腐剂已成为食品科学研究的一个热点。随着研究的深入,被揭示的天然抗菌物质越来越多。本文从抗菌物质的各种来源和应用讨论抗菌物质近年来的研究进展。 Antimicrobial substances are a sort of antibacillus substances.To find more effective, safe and steady substance is a hot topic recendy.More and more antimicrobial substance has been found with the developing of it's research work.This is an article about sorts of sources and uses of antimicrobial substances recently in getting along with it' s researching work.
