摘要 从决明子中提取出一种天然食用红色素,pH8~9水溶液呈现鲜艳红色.用光谱法对色素稳定性进行了分析研究,决明子色素溶于大多数有机溶剂和碱性溶液;pH8水溶液在492.5nm处有最大吸收峰,色价具有较好的耐热性和耐还原性;耐光性和耐氧化性差;在Cu2+、Fe3+溶液中产生棕黄色沉淀;K+、Na+、Mg2+、Ca2+、Al3+对色素无不良影响,可与食盐、蔗糖、葡萄糖、淀粉等食品添加剂并用.宜避光保存,固态为暗红色颗粒,可在室温下长期存放. A natural red food pigment was extracted from cassia seed. pH8~9 liquor presented bright red color. Stability was studied by spectral analysis. This pigment dissolves in pH≥8 alkali liquor and organic solvents, Its pH8 liquor had maximum absorption peak at 492.5nm, colority was %11cmE(492.5nm)≥98. It had better resistance to heat and reduction; poor resistance to light and oxidant ;It was stable in solution of K+、Na+、Mg2+、Ca2+、Al3+; But brownish yellow deposit matter formed in solution of Cu2+、Fe3+. It could compatibilited with common salt、cane sugar、glucose and starch food additives.It should be stored lightscreening. Solidity granule were black red color, and could long-term stored at ambient temperature .
