摘要
以啤酒糟为原料提取可溶性膳食纤维与脱脂乳混合,接入乳酸菌发酵。经调配、均质等工艺过程,制成一种功能性乳酸发酵纤维饮料,为啤酒糟的开发利用提供了一条新的有效途径。
The soluble dietary fiber isolated from brewer's spent grains was mixed with skimmed milk,and fermented by lactobacillus.After preparation and homogenization,a new type of functional beverage named dietary fiber milk was made,so as to provide an effective way for application of brewer's spent grains.
