摘要
目的 :研究冷冻食品中的低温微生物。方法 :采用传统法对 30份样品进行菌属鉴定 ,同时探讨了低温微生物的最适温度和时间。结果 :得出 5类菌属 ,并确定 15℃ 4 8h为低温微生物快速。
Objective:To study psychrotrophic microorganism in frozen food. Methods:The traditional testing method is used to determine genus and the bast temperature and time is studied.Results:Five types of genus are found and 15℃ 48 h is the rapid,feasible temperature and time for paychrotrophic microorganism.
