摘要
使用正交实验探讨了用化学法从罗汉果渣中提取水溶性膳食纤维的最佳工艺 ,得到最佳工艺条件为 :水浴温度T =95℃ ,pH =5 .0 ,提取液用量为 5mL·g-1,提取时间为15min。在该条件下提取率为 2 .2 1%。再使用目前国际通用的Prosky法一酶解法提取水溶性膳食纤维 ,其提取率为 4.40 %。结果显示 。
In the paper,the optimal conditions of chemical method producing soluble dietary fibre from Luohanguo's residue were studied by using orthogonal test.And the results was follows,temperature 95℃,pH=5.0,water volume 5 mL·g -1 ,extracting time 15 min.Under the conditions the extraction rate was 2.21%.Then,Prosky method-enzymatic method,which was recently general in world,was usde to extract the soluble dietary fibre.And it's extraction rate was 4.40%.So enzymatic method was superior to conventional chemical method from the hydrolytic processing technology.
