丢糟富含营养成分,用来代替部分小麦制曲,加糟量15%,加水量38%;制成成品曲糖化力提高112mg葡萄糖/g曲·h,酸度降低0.2,发酵力提高0.54gCO2/g曲。1t曲成本降低100元;按年产10000t酒计,直接经济效益达78.125万元。(孙悟)
