摘要 丢糟富含营养成分,用来代替部分小麦制曲,加糟量15%,加水量38%;制成成品曲糖化力提高112mg葡萄糖/g曲·h,酸度降低0.2,发酵力提高0.54gCO2/g曲。1t曲成本降低100元;按年产10000t酒计,直接经济效益达78.125万元。(孙悟) Waste distiller' s gra in s contained abundant nutrient substance and it could be used instead of partia l wheat to produce starter and the techniques were as follows :15%addition l evel of distiller's grains,38%addition level of water.The saccharifying pow er and fermenting power of the produced product starter increased by112mg Gl u./g·h and by0.54g CO 2/g respectively,and the acidity of the product starter decreased by0.2 .100RMB production cost saved for per ton of starter.By analogy,0.78 125million RMB saved for a plant with annual liquor output as10,000t .(Tran.by YUE Yang)
