摘要
对苦瓜子衣色素的提取工艺、稳定剂及主要成分的结构进行了研究。确定了最佳提取工艺条件,找到了一种不影响色素的色调并对色素有较好稳定作用的稳定剂,经初步鉴定,该色素至少含有两种主要成分,分别为β 胡萝卜素和番茄红素。
In this paper,the extraction process,the stabilizer and the identification of the main conponents in the pigment from the seed peel of Momordica charantia L.are studied.The best condition of extraction process is determined.A suitable stabilizer was selected for the pigment. The two main components of the pigment are identified as βcarotene and lycopene.
