摘要
苹果多酚是苹果中的一类功能性成份,特别在未成熟苹果中含量特别丰富。很多研究表明苹果多酚可作一种优越的食品添加剂─—抗氧化剂,其表现出的生理活性比茶多酚还高100倍以上。介绍了苹果多酚的组成成份,从未成熟苹果中制取苹果多酚的工艺,苹果多酚的生理活性功能,以及在食品工业中的应用。
Apple polyphenol is one kind of functional composition contained in apple. It is very rich in unripe apples. Many researches have proved that the biological activity of apple polyphenol,as one kind of great food ingredients -antioxidant, is more than 100 times than that of tea polyphenol. This paper introduced the composition of apple polyphenol, the production technology used for making apple polythenol from unripe apple, the biological activity of apple phenol biological function, biological activity function of apple polyphenol and its application in food industry
