摘要
葡萄制干受气象条件影响很大。适时制干,出干率高,品质好。影响葡萄制干的关键因子是相对湿度,其次是温度和风。冷浸处理后晾制葡萄干,失水快,制干所需时间短,其品质除含酸量稍高和糖酸比略低外,其他指标都和自然阴干的差异不大。南疆葡萄制干气候条件比吐鲁番稍逊,地区之间差异悬殊,应据据当地气候和小气候特点采取相应对策。
Processing raisin is greatly affected by meteorological condition.
Raisins will achieve good yield and quality if made in a proper time.
The key influential factors are firstly the relative humidity,then temperature
and wind. Soaking grapes in cold water with special medicine before
airing can shorten the processing time, the processed raisins are as good
in quality as naturally dried grasins except for higher acid content and
lower rate of sugar to acid. The meteorological condition for processing
raisins in southern Xinjiang is just a little worse than in Turfan.
Therefore, we should take relevant countermeasures on the basis of local
climatic condition.
