综述了天然食品防腐剂的最新研究进展,主要论述了植物源天然食品防腐剂的制备、抗菌及构效关系等方面的发展情况,并着重论述了植物天然防腐剂活性成分与抗菌效果的关系,旨在为广谱、高效、无毒、天然食品防腐保鲜剂的研究提供参考。
This paper describes the latest progress in natural food preservatives ,focusing on the development trends of natural food preservatives,their extraction from plants,antibacterial actions and effect.The relationship between their active components and antibacterial effect was mentioned,with an aim to provide a reference for researches on non -toxic natural food preservatives with broad antibacterial spectrum and hig h activity.
