不同预处理小麦麸的化学成分及其纤维结构的变化 被引量:1

CHEMICAL COMPOSITION AND FIBER STRUCTURE OF WHEAT BRAN PRETREATED BY DIFFERENT METHODS

摘要 试验不同预处理方法中膨化、酸化、碱化和添加纤维素酶处理的小麦麸,在处理前后的化学成分及其纤维结构的变化.结果表明,经膨化、酸化和碱化处理的小麦麸,与对照相比,总水溶性碳水化合物及水溶性磷含量都明显高于对照组(P<0.05).扫描电镜观察结果表明,膨化、酸化和碱化处理,对小麦麸的纤维结构都有不同程度的破坏,使其养分的利用提高。经各种预处理的小麦麸,经过鸡消化道后的纤维结构也发生变化.扫描电镜观察结果还表明,膨化和纤维素酶处理的效果比酸化和碱化处理的效果更佳。 Experiments were conducted to study the compositions and fiber structure of wheat bran pretreated by different methods(expanding,Ex,alkalization,Al;acidation,Ac;cellulase addition,Ce).The results showed that total soluble carbohydrates and soluble phosphorus concentration in wheat bran were significantly higher in Ac and Ex than those of the control (P<0.05).The results gained by scanning electron microscopy showed that fiber structure of wheat bran treated by Ex,Ac and Al,changed in varying degrees hence the utilization of nutrients wasincreased.Fiber structure of treated wheat bran also changed after it passed through the digestive tract of the chicks.The results were more apparent in Ex and Ce than in Ac and Al.
