摘要
白酒是中国传统饮品,承载着深厚的文化底蕴并具有重要的经济价值。然而,其生产过程涉及复杂的化学和生物反应,对品质提升、风味调控和安全性控制提出了较高的要求。纳米材料因其独特的物理化学性质,如高比表面积、功能化表面及优异的催化性能,在白酒领域的应用得到了越来越多的关注。本文对纳米材料在白酒生产过程中发酵优化、风味调控、质量控制等方面的应用进行了综述;同时,对纳米材料在白酒领域应用面临的挑战及未来发展方向进行了探讨。
Baijiu is a traditional Chinese alcoholic beverage,and carries profound cultural heritage and significant economic value.Its production involves complex biochemical and microbial reactions,which requires precise control over its fermentation and flavor adjustment to maintain product quality and safety.Nanomaterials possess unique physicochemical properties,including high specific surface area,tunable surface functionalities,and excellent catalytic performance.The integration of nanotechnology into Baijiu production has attracted more and more attention.This paper reviews the application of nanomaterials in Baijiu fermentation,flavor adjustment,and quality control.Additionally,it discusses the challenges and future prospects of the application of nanomaterials in Baijiu industry.
