摘要
综述了谷物源抗氧化肽的来源、制备方法、结构特性和活性评价方法,阐述了谷物源抗氧化肽在食品、医药和化妆品领域的综合应用,分析了研究中存在的问题,并对其未来的发展趋势进行了展望,旨在为开发新型抗氧化肽、营养保健品和化妆品提供参考和依据。
The sources,preparation methods,structural characteristics,and activity evaluation methods of cereal-derived antioxidant peptides were reviewed.The comprehensive applications of cereal-derived antioxidant peptides in food,medicine,and cosmetics were elaborated.The existing problems in research were analyzed,and future development trends were prospected,aiming to provide references and basis for the development novel antioxidant peptides,nutritional health products and cosmetics.
