摘要
为优化豆乳粉的功能性质,丰富其营养价值,以溶解度为评价指标,筛选火麻仁的最适添加量和最佳均质压力,并据此评价其生物活性功效、粉体性质、氨基酸组成及感官属性。结果表明,当火麻仁豆乳粉添加量为11%,均质压力100 MPa时,溶解度最佳,达到75.96%。此时,复合豆乳α-葡萄糖苷酶、α-淀粉酶的含量较纯豆乳提升了5.98%,13.76%;平均粒径由75.82μm降低至68.17μm,休止角、滑动角、堆积密度更小。必需氨基酸含量从(7.75±1.67)%提升到(12.85±2.13)%,非必需氨基酸含量从(13.05±2.28)%提升到(15.03±2.42)%,口感醇厚,豆香与火麻仁特有的坚果香气和谐交融,为新型功能化豆乳粉开发提供技术参考和理论支撑。
To optimize the functional properties of soy milk powder and enrich its nutritional value,this paper took solubility as the evaluation index to screen the optimal addition amount of hemp seeds and the optimal homogenization pressure,and accordingly evaluate its biological activity efficacy,powder properties,amino acid composition and sensory attributes.The results showed that:when the addition amount of hemp seed soy milk powder was 11%and the homogenization pressure was 100 MPa,the solubility was the best,reaching 75.96%.At this point,the content ofα-glucosidase andα-amylase in compound soy milk was 5.98%and 13.76%higher than that in pure soy milk,respectively.The average particle size was reduced from 75.82μm to 68.17μm,and the angle of repulsion,sliding angle and bulk density were all smaller.The content of essential amino acids increased from(7.75±1.67)%to(12.85±2.13)%,and the content of non-essential amino acids rose from(13.05±2.28)%to(15.03±2.42)%.The taste was rich and mellow,with the bean aroma harmoniously blending with the unique nutty aroma of hemp seeds,providing technical references and theoretical support for the development of new functionalized soy milk powder.
