摘要
针对小麦粉加工企业使用的食品级小麦粉散装罐车存在的食品安全风险点,如交叉污染、异物混入、微生物滋生、品质劣化等问题,结合企业发生的食品安全案例,重点阐述了散装罐车的管控措施,从罐车资质审核,到罐车清洁和维养,再到卸料管理,及罐车食品安全培训五个方面进行论述。研究旨在为小麦粉加工企业提供可落地的散装罐车食品安全管控方案,为企业提升食品安全管理水平提供实践参考。
This paper addresses the food safety risks associated with food-grade bulk flour tankers used by flour enterprises,including cross-contamination,foreign material contamination,microbial growth,and quality deterioration.Drawing on food safety incidents occurred within the company,it highlights key control measures for bulk flour tankers.These measures are discussed from five aspects:tanker qualification review,tanker cleaning,maintenance and upkeep,unloading management,and food safety training.The study aims to provide practical references for enterprises to enhance their food safety management standards.
