摘要
饮食类非物质文化遗产是美食旅游的核心要素,其区别于普通美食与老字号的核心特征在于技艺活态传承及风俗深度绑定,在美食旅游目的地中具有不可替代的价值。在美食与旅游融合体验中,旅游者关于非遗美食的具身体验存在何种结构、后续如何影响旅游者的判断和行为等是亟待探索的重要问题。结合具身理论和“S-O-R”理论,运用半结构化访谈和扎根理论等方法,解析非遗美食具身体验结构及其相关影响。研究发现:旅游者非遗美食具身体验包含感官体验、文化感知体验、情境体验和价值体验四个维度,各维度均会对旅游者溢价支付意愿产生直接影响;真实性和怀旧是非遗美食具身体验的重要结果,均能积极影响旅游者溢价支付意愿。在此基础上,提出旅游者非遗美食具身体验“认知-情感”双路径模式,并对非遗美食旅游地高质量发展提出针对性建议。
The diet-type intangible cultural heritage is a core element of culinary tourism.Its distinguishing features from ordinary cuisine and time-honored brands lie in the living transmission of skills and the deep binding to customs,giving it irreplaceable value in culinary tourism destinations.What structure exists in tourists’embodied experience of diet-type intangible heritage within the integrated experience of food and tourism?How does it subsequently influence tourists’judgments and behaviors?These are crucial questions that urgently need to be explored.This study combines the embodied theory and the“stimulus-organism-response”theory,and employs methods such as semi-structured interviews and grounded theory to analyze the structural components of the embodied experience structure of diet-type intangible heritage and its related influences.The research finds that tourists’embodied experience of diet-type intangible heritage includes four dimensions:sensory experience,cultural perception experience,situational experience and value experience,each of which directly impact tourists’willingness to pay premium prices.Furthermore,authenticity and nostalgia are significant outcomes of the embodied experience of diet-type intangible heritage,both positively influencing tourists’willingness to pay premium prices.Based on these findings,the study proposes a“cognitive-affective”dual-pathway model for tourists’embodied experience of diet-type intangible heritage and offers targeted suggestions for the high-quality development of diet-type intangible heritage tourism destinations.
