OBE理念下AI驱动酿造酒工艺学课程教学改革与实践

摘要 针对酿造酒工艺学课程教学中存在的课堂教学滞后于技术发展、教学资源配比不均衡、实践资源条件有限、考核方法僵化、评价机制单一等问题,该文依照本科专业工程教育认证理念,以人才产出(OBE)为目标,通过跨学科重构课程体系、AI技术深度驱动核心教学环节和创新评考机制等实践路径,构建“学科交叉+技术融合+产教协同”的三位一体教学模式,并对相关成果进行跨校应用验证,最终系统阐述实现酿造酒工艺学多元化教学的必要性,并提出建立AI酿酒数据隐私保护规范的课程及产业发展方向。 Addressing the problems existing in the teaching of Wine-making Technology course,such as the lag of classroom teaching compared to technological development,unbalanced allocation of teaching resources,limited practical resource conditions,rigid assessment methods,and a single evaluation mechanism,outcome-based education(OBE)was selected as the objectives in this study in accordance with the concept of undergraduate professional engineering education accreditation.In order to construct a three-in-one teaching model of"interdisciplinary integration+technology fusion+industry-academia collaboration"practical paths such as interdisciplinary reconstruction of the curriculum system,deep-driven core teaching links by AI technology,and innovation of assessment mechanisms would be carried out,and the related achievements are also verified through cross—university application.Finally,the necessity of achieving diversified teaching in wine-making technology will be systematically elucidated,and AI data privacy protection norms for courses and the development direction of the wine industry will be established.
