摘要
多数大规模暴发的食源性疾病主要是由病毒引起的,经口传播的人畜共患食源性病毒是危害食品安全的重要因素,已成为严重的世界卫生问题。本文就病毒进化机制、人畜共患病毒传播方式、主要及新型人畜共患食源性病毒和流行病学的生物学特点,以及相关的宿主载体加以阐述,为深入了解新的食源性病毒及主要食源性病毒,预防和控制病毒性食源性疾病流行提供基础。
Most outbreaks of foodborne diseases are mainly caused by viruses,oral transmission of zoonotic food-borne viruses is an important factor endangering food safety and has become a serious world health problem.In this paper,the mechanism of virus evolution,biological characteristics of main and new zoonotic foodborne viruses and epidemiology,as well as related possible host vectors are described,which will provide a basis for further understanding of new foodborne viruses and main foodborne viruses,and prevention and control of viral foodborne diseases.
