摘要
山药富含多种营养成分和活性成分,这些成分使得山药具有抗氧化、降血糖和免疫调节等药理功效;企业基于这些成分与功效,进而开发出一系列的山药产品。该研究系统综述了山药的营养成分、生物活性成分、药理功效及其在食品领域中的应用,旨在为山药在食品中的综合应用及开发创新提供理论依据。
Chinese Yam is rich in various nutrients and active ingredients,which endow it with pharmacological effects such as antioxidation,blood sugar reduction and immune regulation.Based on these components and functions,a series of yam products have been developed.This study systematically reviews the nutritional components,bioactive ingredients,pharmacological effects of yam and its application in the food field,aiming to provide a theoretical basis for the comprehensive application and innovative development of yam in food.
