黑化枣核油提取工艺优化及其理化性质改变的研究

摘要 枣核油是一种富含不饱和脂肪酸的天然油脂,对人体具有健康价值。本实验通过单因素和正交实验,优化了溶剂浸出法与超声波辅助法提取黑化枣核油的工艺,并对黑化过程中枣核油的理化性质进行了研究。结果表明,在提取时间75 min、m(料)∶V(液)为1∶11、提取温度80℃条件下,枣核油出油率为0.136%;在超声时间45 min、m(料)∶V(液)为1∶10、超声功率480 W条件下,枣核油出油率为0.152%,因此超声波辅助法提取效果更好。黑化过程中,枣核油的酸值从2.5 mg/g上升至3.31 mg/g;过氧化值在0~48 h内从1.07 mmol/kg上升至1.54 mmol/kg,60 h下降至1.25 mmol/kg;碘值显著下降;皂化值在0~72 h内从183.28 mg/g降至158.87 mg/g;黑化后的枣核油饱和脂肪酸相对含量有所上升,不饱和脂肪酸相对含量下降,但总体无较大差异。 Jujube kernel oil is a kind of natural fat rich in unsaturated fatty acids,which has health value for human body.In this experiment,the extraction processes of blackened jujube kernel oil by solvent leaching method and ultrasonic-assisted method were optimized via single-factor and orthogonal tests,and the physicochemical properties of the kernel oil of jujube during the blackening process were investigated.The results showed that the oil yield of jujube kernel oil was 0.136%under the conditions of extraction time of 75 min,material-liquid ratio of 1∶11,and extraction temperature of 80℃,and the oil yield was 0.152%under the conditions of ultrasonication time of 45 min,material-liquid ratio of 1∶10,and ultrasonication power of 480 W.Therefore,ultrasonic-assisted method exhibited better extraction efficiency.During the blackening process,the acid value of blackened jujube kernel oil was increased from 2.5 mg/g to 3.31 mg/g;the peroxide value was increased from 1.07 mmol/kg to 1.54 mmol/kg within 0-48 h,and then decreased to 1.25 mmol/kg within 60 h;the iodine value was decreased significantly;and the saponification value was decreased from 183.28 mg/g to 158.87 mg/g within 0-72 h.After blackening,the relative content of saturated fatty acids in jujube kernel oil was slightly increased,while that of unsaturated fatty acids was decreased.However,there was no significant difference overall.
