摘要
随着我国国民经济快速发展和居民生活水平不断提高,公众消费观念发生转变且营养安全意识逐步提高。水产品营养丰富、味道鲜美,已成为我国居民膳食结构的重要组成部分。水产品品质的快速有效检测,有助于保障消费者饮食安全和产业健康发展,并为推进落实大食物观提供理论基础和技术支撑。近年来,光谱技术被广泛应用于水产品品质检测领域,其中,高光谱成像技术(hyperspectral imaging technology, HSI)是在食品品质评定领域发展起来的一种新兴绿色无损检测技术,可对水产品品质指标(物理特性、化学成分、微生物指标等)进行快速检测及可视化表达,应用前景广阔。本文概述了HSI的基本原理,介绍了常用的光谱预处理算法和模型建立方法的特点及适用范围等,总结分析了HSI在水产品品质指标检测中的应用研究进展,并说明了该技术在水产品品质检测应用中存在的问题和展望。本文为推动HSI在水产品品质检测领域广泛应用提供了数据基础,并为水产品质量安全管理及营养品质评价提供技术支撑。
Along with the rapid development of China’s national economy and the continuous improvement of residents’living standards,the consumption concepts of the public have changed,and their awareness of nutrition and safety has gradually increased.Aquatic products,which are rich in nutrition and delicious in taste,have become an important part of the dietary structure of Chinese residents.The rapid and effective detections for the quality of aquatic products are conducive to ensure the dietary safety of consumers and the healthy development of industry,and provide theoretical basis and technical support for the promotion and implementation of all encompassing approach to food.In recent years,spectral technologies have been widely applied in the field of aquatic product quality detection.Hyperspectral imaging technology(HSI)is an emerging green and non-destructive detection technology that has developed in the field of food quality evaluation.HSI possess broad application prospects,which can rapidly detect and visually present the quality indicators of aquatic products including physical properties,chemical components and microbial indicators.In this paper,outlined the basic principles of HSI,and introduced the characteristics and application scopes of common spectral pre-processing algorithms and model establishment methods.Then the summarized and analyzed application research progress of HSI in the detection of different quality indicators of aquatic products.Besides,explained the problems and prospects of this technology in the application of aquatic product quality detection.This paper provided data foundation for promoting the widespread application of HSI in the field of quality detection of aquatic products,and provided technical support for the quality and safety management as well as the nutritional quality evaluation of aquatic products.
