“双一流”背景下专业基础课教学改革——以“食品工程原理”课程为例

摘要 针对食品科学与工程学科本科生存在的专业基础课“食品工程原理”不能很好的与专业核心课进行有机融合这一情况,通过“食品工程原理”教学改革以期达到工程实践能力进一步提升,为后续的专业核心课学习打下坚实的基础。在河南省“双一流”高校创建背景下,根据食品科学与工程学科本科生学情分析、学习内驱力不足等特点,通过针对不同的单元操作结合实际生产中的案例,激发学生对“食品工程原理”课程的热情。授课教师需要每次授课前调研科技前沿知识,在课堂引入环节中下功夫激发学习积极性,同时“食品工程原理”课程设计在一定程度上使同学们的工程实践能力进一步提升,为后续的专业核心课学习打下坚实的基础。在“食品工程原理”教学改革过程中通过聚焦科技前沿,增强“双一流”高校科技创新驱动力,为本科生高质量就业提供助力,促进食品加工行业高质量发展。 In response to the problem of undergraduate students in the field of food science and engineering not being able to effectively integrate the basic course“Principles of Food Engineering”with the core course,through the teaching reform of“Principles of Food Engineering”,we aim to further enhance our practical engineering abilities and lay a solid foundation for the subsequent study of core courses in the field.Against the backdrop of the establishment of“Double First Class”universities in Henan Province,this course aimed to stimulate students'enthusiasm for the course“Principles of Food Engineering”by analyzing the learning situation of undergraduate students in the field of food science and engineering and addressing their lack of internal motivation.By combining practical production cases with different unit operations,the course aimed to inspire students'enthusiasm.Teachers need to investigate cutting-edge science and technology knowledge before each lesson,and work hard to stimulate learning enthusiasm in the classroom introduction link.At the same time,the curriculum design of“Principles of Food Engineering”has further improved the students'engineering practice ability to a certain extent,laying a solid foundation for the subsequent professional core course learning.In the process of teaching reform of“Principles of Food Engineering”,by focusing on the forefront of technology,enhancing the driving force of technological innovation in“Double First Class”universities,it provides assistance for high-quality employment of undergraduate students,and promoted the high-quality development of the food processing industry.
