闽南特色健康休闲食品产业应用专业群的建设与实践研究——以闽南师范大学食品专业为例

Construction and Practical Research on the Applied Professional Cluster for Southern Fujian Characteristic Healthy Snack Food Industry-A Case Study of the Food Science Program at Minnan Normal University

摘要 以闽南师范大学食品专业为例,文章系统分析闽南特色健康休闲食品产业应用专业群的建设背景,包括闽南健康休闲食品市场增长情况,产业痛点与建设必要性,明确应用专业群建设的重要意义。通过构建“一核·双翼·三驱动”的实践模式,即以人才培养模式革新为核心,以课程体系重构与特色实践教学为双翼,以闽南食品资源、产业实践平台和食品交叉学部为三驱动,推动专业群建设。研究指出当前仍存在人才培养能力不足、学科建设待突破、实验室建设亟待加强等问题,并提出“三优化”“三加强”“三投入”的应对对策。研究为深化地方院校产教融合、推动食品学科交叉与创新,为闽南食品产业升级提供有力支持。 Take the food science program at Minnan Normal University as a case example to systematically analyze the development background of the applied professional cluster for Southern Fujian's characteristic healthy snack food industry.This includes examining the market growth of healthy snack foods in Southern Fujian,industry pain points,and the necessity of cluster construction,while clarifying the significance of establishing such a professional cluster.By constructing a"One Core-Dual Wings Three Drivers"practical modelcentered on innovative talent cultivation,supported by curriculum system restructuring and specialized practical teaching,and driven by Southern Fujian food resources,industry practice platforms,and interdisciplinary food studies departmentsthe research promotes professional cluster development.Additionally,we identify existing challenges such as insufficient talent cultivation capacity,pending breakthroughs in disciplinary development,and urgent needs for laboratory improvement.Corresponding countermeasures including"Three Optimizations""Three Enhancements""Three Investments"are proposed.This research provides substantial support for deepening industryeducation integration in local universities,advancing interdisciplinary innovation in food science,and facilitating the industrial upgrading of Southern Fujian's food sector.
