云南不同产区木瓜生化指标差异及其品质特性研究

Study on Differences in Biochemical Indicators and Quality Characteristics of Chaenomeles sinensis From Different Producing Areas

摘要 聚焦云南泸水、永平、施甸三地木瓜样本,通过对单宁、纤维素、游离脂肪酸、总糖、总酸、可溶性固形物、蛋白质含量以及水分与干物质含量等多项关键生化指标进行系统测定与分析,深入探究不同产地木瓜在成分组成上的差异,剖析这些成分差异与木瓜品质特性之间的内在关联。结果表明:泸水、永平、施甸三地木瓜在各项生化指标上呈现出鲜明的地域性特征:泸水木瓜在单宁、纤维素与可溶性固形物含量上具备明显优势,彰显出较强的抗氧化能力与较高的营养价值;永平木瓜在游离脂肪酸与总酸含量上表现突出,使其在果实结构稳定性和风味酸度方面独具特色;施甸木瓜在总糖、总酸、蛋白质与可溶性固形物含量方面表现卓越,赋予其突出的甜度优势。研究成果为科学评价木瓜产地品质提供了翔实的量化依据,也为木瓜的深加工利用指明了方向,助力推动木瓜产业的精细化发展。 This study focuses on Chaenomeles sinensis samples from three regions in Yunnan:Lushui,Yongping,and Shidian.Through systematic determination and analysis of multiple key biochemical indicators,including tannins,cellulose,free fatty acids,total sugar,total acid,soluble solids,protein content,as well as moisture and dry matter content,it deeply explores the differences in component composition of Chaenomeles sinensis from different producing areas and analyzes the internal relationships between these compositional differences and the quality characteristics of Chaenomeles sinensis.The results show that Chaenomeles sinensis from Lushui,Yongping,and Shidian exhibit distinct regional characteristics in various biochemical indicators.Lushui Chaenomeles sinensis has obvious advantages in tannin,cellulose,and soluble solids content,demonstrating strong antioxidant capacity and high nutritional value;Yongping Chaenomeles sinensis stands out in free fatty acid and total acid content,giving them unique characteristics in fruit structure stability and flavor acidity;Shidian Chaenomeles sinensis performs excellently in total sugar,total acid,protein,and soluble solids content,endowing them with outstanding sweetness advantages.The findings of this study provide detailed quantitative basis for the scientific evaluation of Chaenomeles sinensis origin quality,also point out the direction for the deep processing and utilization of papayas,and help promote the refined development of the Chaenomeles sinensis industry.
