摘要
牦牛是具有显著高原适应性的特色畜种,在我国青海、西藏等多地及周边国家部分地区分布广泛,其产业链涵盖育种、养殖、加工、销售等多个环节,具有较高的经济价值。然而,当前牦牛全产业发展总体仍较滞后,牦牛的加工多处于初级阶段,大量加工副产物未得到充分利用。该文综述牦牛产业发展现状、主要营养成分、加工产品以及加工副产物综合利用现状,并对牦牛产业综合加工利用前景进行展望,旨在为牦牛产业精深加工与可持续发展提供理论依据。
Yak,as a characteristic livestock species with remarkable plateau adaptability,is widely distributed in Qinghai,Xizang,and other places in China and some areas in neighboring countries,and its industrial chain covers breeding,farming,processing,marketing,and other links,with high economic value.However,the overall development of the yak industry is lagging behind,and the processing of yak is still in the primary stage,with a large amount of byproducts not fully utilized.This paper summarized the current situation of the yak industry,main nutrients,processed products,and comprehensive utilization of by-products and looked forward to the prospect of comprehensive processing and utilization in the yak industry,aiming to provide a theoretical basis for the deep processing and sustainable development in the yak industry.
